It’s that time of the year again – where chocolate and candy take the spotlight and the house is full to the brim with an assortment of discarded silver foil.

With all these cheeky treats, trying to please the kids with healthy Easter recipes can be almost impossible. Alas, with these nourishing recipes, you’ll have them at the first bite – not to mention the fun you’ll all have while preparing them.

Without further ado – get those sleeves up and let’s get to work on these sweet delights, guaranteed to get your mini Easter bunny’s attention.

Carrot Cupcakes

Ingredients:

– 225gr of grated carrots

– 2 orange’s zest

– 2 eggs

– A cup of brown sugar

– A cup of olive oil

– 55g of crushed nuts

– 55gr of raisins

– 150gr self-raising flour

– 1 coffee spoon of cinnamon

– 1 coffee spoon of powder ginger

– 1 teaspoon of vanilla extract

– 1 tablespoon of butter

– 115gr cream cheese

– 1 lemon zest and tablespoon of juice

– 1 cup of powder sugar

 

  • Pre-heat the oven to 200ºC.
  • In a bowl, let your kids mix the olive oil, brown sugar, nuts, raisins, carrots, spices and half the orange zest. Add the flour, eggs and vanilla extract then mix it all into a smooth uniform batter.
  • Divide into 12 baking cups and place in the middle of the oven for about 30 minutes.
  • While you let the cake cool, it’s time to prepare that tasty topping. For a completely healthy topping, decorate the cupcakes with the remaining orange zest. For an extra treat, add the remaining ingredients, lemon zest, and mix into an even creamier batter – yum!

Chicken Eggs Jell-O

Wibbly, wobbly gelatin – the kids love it! With all the fun, colourful varieties, it’s hard to believe that it also holds many health benefits, too: boosting the immune system, improving digestion and facilitating skin, hair and nail growth. We’ve found a fantastic way of mixing up this kids’ classic – it’s sure to impress on Sunday dinner table.

Ingredients:

(for 6 pieces)

– Your kid’s favourite Jell-O (or a mix of flavours for different colours)

– 6 Chicken eggs

– Olive Oil

  • Rinse the eggs under running water and drive a little hole in the bottom using a knife. Increase the diameter by turning the knife up until it reaches approximately one centimetre in diameter.
  • Let your kids drain the eggs into a bowl (you can use them for another recipe, or prepare scrambled treats full of protein for another easy meal).
  • Clean the eggs with water and place the shells in the oven at 150º C for about 10 minutes.
  • Prepare your Jell-O following the maker’s instructions. Place the eggs in their cardboard box with the holes facing upwards. With the aid of a funnel, let your kids pour Jell-O into the empty eggshells until they are full. Place them in the freezer overnight or until they’ve solidified.

Banana & Chocolate Popsicle

If you must get the chocolate in there (and let’s be fair, it’s illegal not to at Easter time) – this one is always a favourite.

Ingredients:

– 3 medium ripe bananas

– 6 wooden sticks

– 3 tablespoons of chopped almonds, peanuts or other toppings of your choice

– 1 dark chocolate bar over 65% cocoa

  • Ask for your kids to help in peeling the bananas and cutting them in half. Insert each half into a popsicle stick and place them on a tray.
  • Cover the bananas in plastic wrap and let them sit in the freezer for about 3 hours.
  • Break the chocolate bar into little pieces and melt in a pan. Stir it all together and pour into a tall glass.

Dip each banana in the chocolate and roll to coat. Let the popsicles set a while and roll them over the almonds or peanuts on a shallow plate. Let it set in the freezer for another 30 minutes.
