Valentine Special: Healthy Chocolate Chip Cookies

Cookies don’t need to be unhealthy, fattening or too sweet. We have prepared a great suggestion for you, which will permit you to enjoy your favorite type of cookie and have no regrets. This healthy option is quick and easy to prepare. The recipe is for a batch of approx. 40 very tasty Chocolate Chip Cookies. Enjoy!

INGREDIENTS:

  • 3 large bananas
  • vanilla extract
  • olive oil
  • almond meal flour
  • shredded coconut or almonds
  • oats
  • salt
  • cinnamon
  • baking powder
  • chocolate chips

1.Preheat your oven to 350 F. Place the oven rack on the highest position in your oven.

2.Place 3 large, overripe and well-mashed bananas in a large bowl. If you need to, put peeled bananas for 1 min in the microwave to make them softer. Add 1 tsp. of vanilla extract and 1/4 cup of lightly warmed olive oil. Stir to mix the ingredients.

3.In another bowl mix 2/3 cup of almond meal flour, 1/3 cup of shredded coconut or almonds, 2 cups of oats, 1/2 tsp. salt, 1/2 tsp. of cinnamon and 1 tsp. of baking powder. Mix them with a large fork.

4.Join dry and wet ingredients and stir together slowly.

5.When combined, add 1 cup of dark chocolate chips and stir to mix all the ingredients evenly. Make sure you will not overdo it; the dough needs to be sticky and easy to separate.

6.Place small balls of cookie dough on a sheet of baking paper. Bake for 12 to 15 min.

7.Before you take them out make sure they are baked through; give them a try.
