Holmes Place Café Recipes: Oat based tart with zucchini, manouri cheese, almonds and cashews

Holmes Place | τάρτα με κολοκύθι και μανούρι

Try to make this light and healthy summer tart or enjoy it at Holmes Place Café during July!

Ingredients for one tart of 32 cm:


For the base:


  • 200 g oat flakes
  • 100 g white grated almonds
  • 100 g raw grated cashews
  • 100 g whole grain flour
  • 80 ml olive oil
  • 50 ml cold water
  • 1 teaspoon of baking powder
  • salt & pepper


For the filling:


  • 5 medium grated zucchinis 
  • 1 medium grated onion
  • 2 tbsp of strained yoghurt 
  • 1 egg
  • 150 g manouri cheese cut into cubes 
  • 2 tbsp of finely chopped spearmint
  • 60 g whole grain flour
  • 50 ml olive oil
  • 1 teaspoon of baking powder
  • salt & pepper 


Preparation:

  • Place all the ingredients for the base in a bowl and mold them into a uniform dough.
  • Lay the dough into a tart form, pushing it with your fingers to roll it out to the same thickness everywhere.
  • Bake the base for 20 minutes at 170 degrees until it gets golden brown.
  • In another bowl, place all the ingredients for the filling and stir them all together.
  • Spread the filling on the pre-cooked base and bake at 170 degrees for another 40 minutes, until the tart is browned.
  • Allow to cool and cut into pieces. Serve with a cold dip of strained yoghurt, finely chopped spearmint and olive oil.
